The deep skillet for slow Sunday pancakes and simmering suppers

The two numbers that decide this pan are 12 inches across and 5 quarts of capacity. Those are the measurements the listing gives, along with an induction base and a glass lid. Most of the other claims are descriptions rather than measurements, and this note sorts one from the other.

The size is the part that decides. The listing gives 12 inches across and 5 quarts of capacity, and names sautéing, stir frying, searing, boiling, simmering, blanching, braising, deep frying and stewing as uses. It does not state the interior depth, the weight or the maximum safe temperature, so check those before planning anything at high heat.

The body is heavy duty cast aluminum, and the listing says it will not warp. The base is described as induction compatible and suitable for all stovetops. Fast, even heating is a claim without figures. The nonstick surface is named as Switzerland ILAG, and the listing says it is free of PFOA, PFOS, lead and cadmium. Terms like super nonstick and healthy are descriptions, while the free of list is the part that can be checked.

The handle is bakelite with a woodgrain design, and the listing says it stays cool while cooking. The title also mentions a helper handle. The lid is tempered glass, described as explosion proof. The listing mentions a design with no rivets, which it links to easier cleaning, and it recommends hand washing to extend the life of the surface. It is also sold in ceramic taupe, pink and blue, each at 5 quarts and 12 inches.
